The results revealed a counterintuitive pattern: there was no statistically significant difference in the proportion of individuals reporting clinical worsening between the groups consuming gluten (55%), whole wheat (52%), or placebo (52%). Crucially, stool analyses exposed a critical discrepancy: only 33% of participants showed detectable levels of gluten peptides after the corresponding intervention phase, indicating that the majority did not consume the bars as instructed – possibly due to anticipated fear of symptoms. Furthermore, even when informed about which bars were trigger-free, over 80% of participants maintained their belief in their sensitivity and refused to reintroduce gluten or wheat into their diet.
